Food Friday…

This week, it’s a side dish instead of a main dish.

Cheddar Sweet Potatoes
from Cooking Light Annual Recipes 2008

~ 1 1/2 lbs sweet potatoes
~ 1% milk (I used 2%, and I’m sure whole would be fine, too.)
~ 1/2 c shredded cheddar cheese
~ 1/2 cup chopped green onions

1 – Place cubed, peeled sweet potatoes in a saucepan, and cover with water. Bring to a boil.
2 – Reduce heat, and simmer until tender, about 15 minutes.
3 – Drain, return potatoes to pan.
4 – Add milk, cheese, and green onions. Mash to desired consistency.
5 – Cook over medium heat for 2 minutes or until thoroughly heated, stirring constantly.

Y’all, I never would have thought cheese and sweet potatoes would be a good pairing, but this turned out to be SO GOOD. And of course, I added lots more cheese than the recipe called for! 🙂 I know the picture isn’t great, but I promise it was really tasty. I had this with steak as a main dish. Muy nom!!! 😉
