Food Friday

This week: pumpkin bread!

Downeast Maine Pumpkin Bread

~ 1 15oz can of pureed pumpkin
~ 4 eggs
~ 1 cup vegetable oil
~ 2/3 cup water
~ 3 cups sugar
~ 3 ½ cups all-purpose flour
~ 2 t baking soda
~ 1 ½ t salt
~ 1 t cinnamon
~ 1 t nutmeg
~ ½ t ground cloves
~ ¼ t ground ginger

1 – Preheat oven to 350 degrees F.
2 – Grease and flour 3 7×3 inch bread pans.
3 – In a large bowl, mix together pumpkin, eggs, oil, water, and sugar until well blended.
4 – In a separate bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
5 – Stir the dry ingredients into the wet ingredients until just blended.
6 – Pour into prepared bread pans.
7 – Bake for 50 minutes or until toothpick or knife inserted in the center comes out clean.

A thick slice slathered with butter makes a yummy breakfast!

  1. I LOVE pumpkin bread, but could eat a loaf at one sitting if not restrained, so I don’t make it much. Are you from Maine? My family and my husband’s are from there, although I’m not. I visit a lot though.
