Food Friday!

In honor of the New Year, how about some Texas Caviar?!?!? In the South, eating black-eyed peas on New Year’s Day is thought to bring good luck (and eating something green ensures prosperity)! I don’t know about you, but I need all the help I can get! 😉

~ 1/2 onion, finely chopped
~ 1 green bell pepper, chopped
~ 1 bunch green onions, chopped
~ 2 jalapeño peppers, seeded and minced
~ 4 cloves garlic, minced
~ 1 pint grape tomatoes, quartered
~ 8 oz. bottle zesty Italian salad dressing
~ 2 (15 oz.) cans black-eyed peas, drained
~ 1 bunch fresh cilantro, chopped

1 – In a large bowl, combine all ingredients except cilantro and stir gently to combine.
2 – Store, covered, up to 10 days in refrigerator.
3 – When ready to serve, mix in the chopped fresh cilantro and serve as a dip with tortilla chips or toasted baguette slices (I like to use Club crackers.)

  1. I used your recipe and totally made a huge thing of this! JoJo hates Black Eyed Peas but he loved it!
